Savory "sausage" and Rice Chardonnay (p.
158)
Ingredients
- 1 TBSP olive oil
- 1/2 TBSP dried minced garlic
- 1 C thinly sliced scallions
- 1 14-ounce package Gimme lean, sausage style
- 8 ounces portobello mushrooms, sliced
- 1/2 C chardonnay
- 1 C raw white rice
- 4 C chicken-flavor vegetarian broth, boiling
- 3 TBSP nutritional yeast
- 1 tsp dried marjoram
Directions
In a large saucepan, heat oil and minced garlic over medium-high heat for 1 minute. Add scallions and
sauté 3 minutes. Add "sausage" and cook 5 minutes, stirring frequently with a large spoon to break up "sausage". Add chardonnay and cook 3 minutes; then stir in rice and remaining ingredients. Reduce heat to simmer, cover, and cook, stirring occasionally, 20 minutes or until rice is tender.
