Salsa Fresca (p. 91)
Makes about 1 cup

Nothing beats homemade salsa made with red ripe tomatoes. Cilantro and lime juice add authentic flavors to this zesty relish and topping.

Try this on: black bean tacos, cold penne pasta, green beans with green bell peppers.

Ingredients

  • 4 roma plum tomatoes, cored, seeded, and chopped
  • 1/4 cup chopped red or white onions
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice or lemon juice
  • Several drops of Tabasco sauce
  • Pinch of salt

Directions

Combine all the ingredients in a small bowl, and stir together until well combined.

Tip: To seed a tomato, cut the tomato in half crosswise, and gently scoop out the seeds.
