Pecan Pie
Yield: 1 (8-inch) pie (12 servings)

Try this for a holiday pie.

Preheat the oven to 350°F.

Have ready:

  • 1 (8-inch) unbaked pie crust

Blend in a food processor or blender until smooth and creamy:

Ingredients

  • 1/2 pound regular tofu
  • 1 cup brown granulated sweetener of choice
  • 1 teaspoon vanilla
  • 1/3 cup light molasses
  • 1/4 teaspoon salt

Fold in:

  • 1 1/2 cups whole pecan pieces

Directions

Pour into the unbaked pie shell, and bake for about 45 minutes or until cracks start to form around the edge of the filling. Serve with Creamy Topping, p 134, or vanilla soy ice cream.
