Easy Bean Spread with Walnuts

At least once a week I make a loaf of bread. I have a very easy basic recipe for yeast bread that I vary all the time. It's a whole wheat bread but you can add a lot off different flours. This time I added corn flour, threw some seeds in and and thyme. In my opinion, corn flour and thyme are just a perfect combination.

Ingredients

  • 1 can pinto or kidney beans (1 1/2 cups)

  • 140g (1/2 cup) hot salsa

  • 30g (1/4 cup, 10 halves) chopped walnuts

  • 2 tsp. apple cider vinegar

  • 1 clove garlic

  • 1-2 Tbsp. chopped parsley.

Directions

Place the walnuts in a food processor and pulse until they turn into a course meal. Add the garlic, pulse again and then add the remaining ingredients. Pulse until the spread has the consistency of hummus.
