Dee Dee's Super Cookies
Serves 36
Preparation time: 10 minutes
Cooking time: 20 to 25 minutes
Ready in: 30 to 35 minutes

Ingredients

  • 1/4 cup vegetable oil

  • 3/4 cup maple syrup (or agave nectar)

  • 1 Tbsp vanilla extract

  • 1 can crushed pineapple (398ml/14oz)

  • 2 cups whole wheat flour (or spelt)

  • 1/2 cup chopped walnuts (or almonds, etc.)

  • 1/4 cup pumpkin seeds

  • 1 cup raisins

  • 2 cups quick oats

  • 1 tsp sea salt

Directions

Mix all wet ingredients together.  Add dry ingredients and combine until mixed well.  Use ice cream scoop and place on prepared cookie sheet.  Bake at 350°F for 20 to 25 minutes.
